Thank goodness for Monday!

You don't here that too often, do you? After a busy weekend, Beth and I are both very glad to me home alone, only to clean and do laundry...it won't be as spicy as you might think, and relax. We had a great time at Jann's paernt's house, and lunch with Vivian was a good time. Although, poor Vivan got sick later in the day from a pain killer she had taken earlier in the day. She's still recovering. Poor thing.

Dinner last night with Beth's parents was a lot of fun, too. Carter has been on a big cooking kick lately, and has been watching the Food Network and more specifically, Emeril, more than he has been looking at a computer screen lately. That's a big deal! Well, it has paid off quite well, for us anyway. We had home made fried calamari last night AND coconut shrimp all thanks to Carter's new deep fat frier. Prior to that we had the standard chips, cheese and salsa. For dinner we had barbequed prime rib, homemade creamed corn, my famous (or not so famous?) garlic mashed potatos, homemade macaroni salad and bread. It was a meal to die for, and I nearly did. After consuming too much of everything, on top of my four Stoli Citronas, my stomach was about to burst. Fortunately, the pig fest lasted over three hours, so the food had a little time to settle before I stuffed more in. I ended up on the couch trying to stretch my stomach so I wouldn't be so uncomfortable.

After dinner and desert was over, the neighbors headed home, except for one. Beth and I, her parents and Bob ended up sitting out on the driveway talkin' away until midnight. It was finally time for us all to hit the sack. Needless to say, the drive home was a long one.
