My relaxing week at home is treating me quite well! I have been able to make some good dinners, including my made-up-recipe to mimic a dish from my favorite New York resteraunt. I will be putting it on my recipe page soon. Last night I made simple tacos, but boy, were they good. Tonight, I am going to master the lettuce wraps (I hope). We'll be having that with PF Chang-like wonton soup. Great stuff, maybe I'll put that on my recipe page, too. Jenn gave me a great recipe for corn and crabmeat soup which sounds excellent. I'll have to try that soon, too. Tomorrow night we're having chicken fajitas with mango salsa. This recipe can be found on my recipe archive. It's so nice to be able to cook in my new kitchen! I love it. I'd be happy to throw a dinner party any time someone wants to come over!
Otherwise, I've done the normal errands. I had to get my car lubed and smog checked as regigistration is due next month. Today, I am going to go get Port of Subs and meet Beth for lunch. That'll be nice. Then, I need to head over to her parent's house to drop some stuff off and pick up other stuff. Tonight, after dinner, Beth and I have a mall date. How romantic!
I will be returning to the friendly skies Friday night, but will be home Sunday night on a layover!
